Luc De Laet, Antwerp's most famous butcher, from the luxury butcher's shop De Laet & Van Haver, has developed a type of dried, aged meat, Secreto 07: a rib from a Spanish Rubia Gallega cattle is dried for seven weeks in a "secret" mixture of seven different herbs and spices. Comparing the processes of marinating beef and macerating gin, Luc De Laet came up with the idea of distilling the herbs used in Secreto 07 together with some of the dried meat itself.
