The name "China" is derived from the Inca word "kinia", meaning "bark". Since time immemorial, the Indians have known about the healing properties of the bark of the quinine tree. Later, the quinine tree was exported to Europe and became known for its heat-reducing and antimalarial properties. In 1884, the botanist, Dr Giuseppe Clementi, developed the recipe for 'China Clementi' in his apothecary's shop among the Tuscan mountains and forests. It is an elixir made from a harmonious combination of two species of quinine tree (Chincona Calisaya and the rare Chinchona Succirubra) and various aromatic and medicinal herbs.To extract the essential properties, the bark of the quinine tree is finely chopped and added to a solution of water and alcohol, together with the medicinal herbs and orange peel. After some time, the extract is mixed with the highest quality sugar and alcohol. The resulting product is put into special steel tanks and aged for at least 12 months; the tanks are stacked horizontally in a pyramid and the aging is carried out using the solera method. There are many ways to enjoy it: as a tempting aperitif with ice and a slice of orange; as a refreshing cocktail with grapefruit juice and ginger ale; or simply to drink slightly wamed on a brisk winter's evening, neat or with a cup of coffee after a hearty supper.
