Grapa Barolo Nivis Riserva, born in winter and strengthened by the north winds. The constant search for innovation and perfection by the Marolo distillery has led to a grappa born from the cold. This is a limited edition 2006 vintage grape from Nebbiolo from the pomace of Barolo grapes, matured in oak barrels. A total of 2 571 bottles were produced.

Nivis is the first grappa to be stabilised naturally and filtered without mechanical refrigeration. Typically, before bottling, the grappa consists of a liquid part made up of alcohol and water and an oily part made up of fatty acids, proteins and esters remaining after distillation of the pomace. The bottling process requires the distillate to be cooled in stills, where the oils and fats solidify for easy subsequent removal through barrier filters. Such filtration is carried out rapidly, subjecting the distillate to a powerful thermal shock and thus affecting the aromatic bouquet and complexity of the end product.

Nivis, meanwhile, is a unique grappa that has undergone an ancient method of natural stabilisation instead of the usual mechanical filtration by refrigeration.The barrels of the excellent 2006 vintage of Barolo grappa were left to the winter weather of 2019: rain, wind, cold and, above all, snow, which buried the barrels under 40 cm of cover. For three months, these conditions slowly and gently affected and stabilised the grappa. 

In order to create a distillate with a strong character and at the same time balanced, it was diluted minimally, leaving an impressive strength of 53,8. 

A lively, vibrant grappa bursting with aromas, combining an extraordinary richness of aromas (cloves, pepper, nutmeg, anise, liquorice, tobacco) with a sumptuous, vibrant and extremely long-lasting flavour. A tribute to nature and its unique transformation through the art of distillation.
